Prison Recipes

In prison we are served three meals a day. Breakfast is around 5:15 a.m. (I rarely make it to breakfast), lunch is around noon, and supper is around 5 p.m. Most of the meals are edible, but occasionally I choose not to go, like when liver and onions are on the menu.

We are allowed to purchase certain food items through Canteen, and we have two microwaves in our wing. I haven´t had a microwave for years, so all I know is how to heat something up, but these women take microwave cooking to a whole new level! Did you know you can make delicious mashed potatoes by hydrating sour cream and onion potato chips?

So I figured I would share some of the things I´ve learned to make. This recipe was taught to me as lasagna. I used the exact same ingredients in a slightly different way, and it turned into Baked Spaghetti Pizza.  We do not have access to measuring spoons and cups, so we eyeball it. Try it, and let me know what you think.

INGREDIENTS:

1 package Ramen noodles, any flavor (yes, I know these aren´t good for you)
pepperoni
mozzarella cheese (we can only get processed cheese)
pizza sauce
water
diced onions (optional)
garlic powder (optional)

DIRECTIONS:

Break the Ramen noodles up before opening the package. Dump noodles into a soup bowl and discard seasoning packet. Add water to cover noodles and microwave for two minutes (noodles will be undercooked, but don´t worry as you´ll cook them some more). Add pizza sauce to noodles until saucey. Add diced onions and garlic powder and mix well.

Chop pepperoni into fourths (the more the better). Take a clean bowl and spread half the noodle mixture on the bottom. Sprinkle noodles with pepperoni and mizzarella cheese (I slice my cheese with a plastic card--no knives here--as the cheese comes in a block). Add the rest of the noodle mixture and sprinkle again with pepperoni and cheese. Microwave for another two minutes until cheese is melted (I have to microwave mine for 3+ minutes as processed mozzarrella cheese does not melt easily). Let cool a bit and enjoy!
